Ingredients
1/2 Cup white sugar
1/2 Cup packed brown sugar
1/4 Cup butter, softened
1 egg
3 Tablespoons orange juice
1/2 teaspoon orange extract
1 teaspoon grated orange zest
1 1/2 Cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 Cup sweetened dried cranberries
Preheat oven to 375°. Lightly grease cookie sheets or line with parchment paper. Beat butter, brown sugar, and granulated sugar in bowl until creamy. Add egg, orange juice, orange extract, and orange zest. Beat well. Combine flour, baking powder, baking soda, and salt; add to butter mixture, beating well. Stir in the dried cranberries. Drop by heaping teaspoons onto prepared cookie sheets.
Bake 10 to 12 minutes or until edges are lightly browned. Cool 5 minutes on cookie sheet; remove to wire rack to cool completely. Makes about 3 dozen cookies.
